October: Pies! (Virtual)

Our little library Cookbook Club has been getting together for three years, officially!

This month, we shared recipes from both The Perfect Pie by America’s Test Kitchen, and The New Pie by Chris Taylor and Paul Arguin.

Our Cookbook Club

We met virtually for the second time and had quite a good group attend. We even had someone join in from their cross-country road trip!

Feedback

There were two books to choose from this month, and a very clear favorite as well. Those that did prepare recipes from The New Pie found that with some time and adjustments, the final product was tasty. Overall though, the recipes were very involved with lengthy instructions, the crusts took far longer than called for, and in general were too complicated. Most of us felt the focus was more on presentation and the photos (which were beautiful), but the recipes seemed predominantly a little too “funky” and “gimmicky” in general.

In The Perfect Pie, although some of the pie crusts took many steps and also seemed very involved, we really enjoyed the results. The “Tart” crust recipe in particular was quite a fete and a bit “finicky”, but provided for a very tasty and beautiful pastry. One found her recipe to be way too sweet, and the crust was quite dry. We loved the layout of the book in general, the different types of dough and equipment to be used in the beginning were helpful. The recipes were easy to follow, very thorough, and only some had to make minor adjustments.

The Food

We prepared so many delicious pies, primarily from The Perfect Pie. Several of us agreed that the “Double Pie Crust” is a tried and true no fail recipe. Another found mixing up the crusts to her own liking to pair with different recipe fillings had great results. Among the recipes made were a French Apple Tart and a Portuguese Egg Tart, a Key Lime Pie subbing a Gingerbread Crust, Mixed Fruit Galette, Oatmeal Scotchie Pie, a pie made with Beets, Chocolate Pie in a Jar, and a No-bake Cheesecake Pie with Limoncello and Lingonberry.
